Grilled Chicken Wraps with Mandarin Orange Salsa

Winter break is officially over.  
A teeny, tiny part of me is happy because we can get back to some sort of routine and eat 3 meals a day.  The other part...the bigger part of me is super sad that it is coming to an end. I did like having more unscheduled time and eating around the clock!  Did you all do that too?  Seems like it was always time to eat something, cookies and fudge at my fingertips and snacks galore!  But, reality has set in and it's back to work and school.  Afterall, my coworkers probably missed me?  Right?

Since I seemed to be constantly wiping cookie crumbs from my lips, it was time for some healthy dinners that did not include foods from an elf's 4 main food groups or pyramid or whatever it is being called....see, the snarkiness is back 'cuz I am missing those sweet treats!  Anyhow, these Grilled Chicken Wraps are a tasty meal to help shed those sugar ounces, because I know that's what I gained...ounces not pounds!  :)


Grilled Chicken Wraps with Mandarin Orange Salsa
are filled with chicken strips that have been marinated in a tropical marinade, grilled to perfection, wrapped up with some crunchy veggies and mandarin orange salsa.  I'd say they are packed with yummy goodness!


The great part about wraps is that they are customizable (is that a word?).
Lay out all your healthy ingredients and fill the way you like.  My favorite part is the mandarin orange salsa on the inside.  Check out the recipe...

Ingredients:
2 chicken breasts 
1/4 cup olive oil
1/4 cup pineapple juice
1/2 cup orange juice
2 Tbsp red wine vinegar
flour tortillas
shredded lettuce
julienned carrots
chow mein crunchy noodles
1/4 cup mandarin oranges
1/4 cup pineapple tidbits
1/2 cup chopped spring mix lettuce
1 Tbsp lemon juice
1/2 tsp salt
Directions:
Whisk together olive oil, pineapple juice, orange juice and red wine vinegar.  Place raw chicken breasts in marinade for about 30-40 minutes.  Meanwhile, make the mandarin orange salsa.  Chop the mandarin oranges.  Mix the mandarin oranges with the pineapple tidbits, chopped spring mix lettuce, lemon juice and salt. Set aside.  Heat up the grill.  When hot, grill the chicken on a medium hot grill about 7-8 minutes per side or until no longer pink.  Slice chicken into strips.
Put out a board that includes tortillas, sliced chicken strips, shredded lettuce, julienned carrots, chow mein crunchy noodles and mandarin orange salsa.  Serve.

The chicken has a wonderful, tropical, grilled flavor, especially good when it's winter and you are longing for that summer taste!  Combined with the sweet orange salsa, crunchy carrots and chow mein noodles...lots of goodness going on.  Since the kiddos can customize their own wrap, they will love it too!  And you know what?  Grilling in the winter is AWESOME!
