Cinnamon Apple Pork Tenderloin

Do you ever have moments when you feel overwhelmed by the craziness of life?  You know, those times when you can't seem to keep all those plate juggling in the air?  A forgotten appointment...boots that are just gone (that's a whole story other story)...plants wilting from lack of remembering to water...out of toilet paper again...oh, you want dinner?...you get the drift.  But, sometimes things just have to be kept in perspective.  I love this little saying when I am feeling overwhelmed and I thought maybe it would help you too when life just seems karazeee!

1.   Early wake-ups = Children to love
2.   House to clean = Safe place to live
3.   Laundry = Clothes to wear
4.   Dirty Dishes = Food to eat
5.   Crumbs under the table = Family meals
6.   Shopping to do = Money to use
7.   Toilets to clean = Indoor plumbing
8.   Lots of noise = kids having fun
9.   Endless questions = kids learning
10. Getting into bed sore and tired = I'm still alive

Ain't that just the truth?  So when you have to wipe up those crumbs from under the table AGAIN, just remember that you had a wonderful family meal.  Before you know it, those crumb makers will be off to college.  :)

Well, here's a family meal easy enough for a weeknight dinner 
or fancy enough for a Sunday sit down!


This pork is so flavorful because it bakes with cinnamon and slices of apples.
But, the best part is it is topped with a sweet apple and cranberry sauce!


Can't you just imagine the aroma from your kitchen?

Ingredients:
1 1/2 lb pork tenderloin
1 baking apple, sliced
2 Tbsp honey
2 tsp cinnamon
Directions:
Preheat oven to 350 degrees.  Cut slices into tenderloin every 3/4" about halfway into the meat.  Insert an apple slice into each cut.  Place pork tenderloin onto a baking pan.  Drizzle with honey and sprinkle with cinnamon.  Bake at 350 degrees for about 50 minutes.  Remove from oven and let sit 10 minutes before serving.
Ingredients for Apple Cranberry sauce:
1 baking apple, chopped
1/2 cup sweetened, dried cranberries
1/4 cup orange juice
1 Tbsp honey
1 Tbsp butter
1/2 tsp cornstarch
Directions:
Melt butter.  Add apples and cranberries.  Stir in the orange juice, honey and butter.  Cook until apples are slightly softer.
Stir in cornstarch to thicken.  Spoon over slices of pork to serve.


Fall on your dinner plate!

And when you are cleaning up those toilets so they don't look like a gas station bathroom...remember to be grateful for indoor plumbing.  :)  It's all about perspective, right?
