Key Lime Napoleons

Key Lime Pie screams summer...which is why I am thinking about it in January.
I crave citrus this time of year!  
Thinking about orange groves or warm, tropical places where key lime trees thrive keeps me warm in my mind and soul.


Each bite of these tropical flavored napoleons will make the sunshine come out...really!


 Key Lime Napoleons are light, which is just perfect for those new year's resolutions.


Sandwiched between those lady fingers is a creamy, light key lime cream that tastes just like key lime pie.  I love how they are little too.  Just eat one or two and you will feel satisfied.


Ingredients:
1 cup heavy whipping cream
1 Tbsp key lime zest
1/2 tsp vanilla extract
dash of salt
1/2 cup powdered sugar
1 1/2 Tbsp key lime juice (fresh or from the bottle)
1 package of ladyfingers
powdered sugar for dusting
Directions:
In a cold bowl, whip heavy whipping cream, dash of salt, vanilla and powdered sugar.  When soft peaks begin to form, add key lime juice and key lime zest.  Whip until stiff peaks form (a stiff peak is when you pull up the beaters, the cream pulls into a peak that stays).  Split ladyfingers.  Spoon key lime filling onto 1 ladyfinger half.  Top with the remaining lady finger.  Store in refrigerator until ready to serve.  Dust with powdered sugar and more key lime zest.
