Terrific Turkey Recipes

It was just a few years ago that I suffered from Turkey Trouble Trauma...
THE turkey hotline is set up in my hometown but even that wasn't enough to solve my problem.  
The morning of the big feast, as I opened the turkey package, a poof of the most horrendous odor came out.  It was at that moment that I realized the bird was spoiled.  No amount of discussion with someone on the turkey hotline would fix the problem.  I had to go to Plan B:  find another defrosted turkey on Thanksgiving.  Simple, right?  I found something in the freezer department that cooked in a bag.  Not the most ideal choice, but it worked nonetheless.  Besides, Thanksgiving is really about being with family.  My guests would have been happy no matter what we served.  Anyhow, cooking turkey on Thanksgiving is a tradition and I have a turkey recipe for the slow cooker that is fabulous!  I also have a terrific recipe for that leftover turkey.  Check them both out!




Slow Cooker Turkey Tenderloin is a dump and cook dinner.  Add all your ingredients and let it cook for hours.  Delicious aroma awaits you while it is cooking.  Then you can have dinner on the table when you are ready.  Kind of a perfect scenario!  Tender, juicy turkey perfect for Thanksgiving or a weeknight meal.  If you will be serving more than 6, you may want to cook 2 turkey tenderloins.


Ingredients:
1 turkey tenderloin
1/2 cup orange juice
1 can whole cranberries
1 packet dry onion soup mix
1 packet dried, sweet cranberries
Directions:
Place turkey tenderloin in a slow cooker.  Pour orange juice and whole cranberries on top. Sprinkle on the dry onion soup mix.  Turn the slow cooker on low and cook for 4 hours.  Slice and serve with the leftover liquid from the slow cooker.  Sprinkle with dried, sweet cranberries.


IF you have leftovers, then this is a fabulous way to use some of that turkey.  Turkey, red onions, mozzarella and goat cheese sitting on a cranberry bbq sauce coated flatbread.  Thanksgiving leftovers never looked so good!


Ingredients:
1 whole wheat flatbread (per 1-2 people)
Cranberry BBQ Sauce (click link for recipe)
leftover turkey
red onion, sliced
dried, sweetened cranberries
fresh mozzarella
pieces of goat cheese
rosemary
Directions:
Preheat oven to 350 degrees.
Spread Cranberry BBQ sauce on each flatbread.  Top with red onions, leftover turkey and cranberries.  Place slices of fresh mozzarella and pieces of goat cheese on top.  Sprinkle of rosemary.  Bake at 350 for 8-10 minutes or until cheese melts.
