Lemon Raspberry Cookie Bars

After work yesterday, I met up with a bunch of girls.  We all know each other from the same job location, but some of us have left and are at various other locations within the same company,  One girl from the group just had a baby, another recently got married, some have high school kiddos and some have kids in college.  We come from all stages of life, but our bond from the original work place is still strong.  Oh my gosh, it is so fun to get together and catch up!  We just laugh and laugh over a glass of wine.  I so love getting together with them to keep up on their lives.  If you haven't seen a group of girlfriends in awhile, I highly recommend you have a casual gathering...just does wonders for the soul!

On to a scrumptious little treat...which also does wonders for the soul!


Made with only 5 ingredients, well, 6 if you count water?!  Let's just say 5 ingredients to create the most scrumptious little treat.



You are going to be surprised with the ingredients within this goodie!!!
Layers of lemon raspberry flavor!


Are you ready?  Check out the ingredients!

Ingredients:
1 roll prepared sugar cookie dough (16.5 ounces)
5.3 ounces of nonfat Greek yogurt
3 tsp lemon curd (found in the jelly aisle)
1 tsp honey
1/3 cup raspberry jam
1 1/2 tsp water
Directions:
Preheat oven to 325 degrees.  Pull of pieces of sugar cookie dough and scatter them around an ungreased 13 x 9 inch cookie sheet.  Press the dough to cover the entire cookie sheet.  Bake at 325 degrees for 10 minutes.  Remove from oven.
Lightly press around the corners to create an edge.  Cool.  Once cool, mix together Greek yogurt, lemon curd and honey.
Spread a thin layer across the baked cookie bar.  In a small bowl, mix together raspberry jam and water to thin out jam.  Drop thinned raspberry jam in lines down the length of the cookie bar and drop along all the edges of the cookie bar.  Use a knife to drag across the lines to create the pattern.  See above picture.  Cut into square pieces.  Place 1 piece on top of the other to stack the treats.  Keep refrigerated until ready to serve.


 So pretty and the flavor will make you want to lick the plate.  Starts with prepared cookie dough for ease.  Uses some amazing ingredients like non-fat Greek yogurt, lemon curd, honey and  raspberry jelly.  Bakery worthy for sure!
