Sloppy Joe Cups

Last night, the hubby and I were talking about food we used to eat as a kid.  TV dinners were hot and we both recalled how the back used to pop up into a scene of some sort.  Kind of like a tv screen.  Then there were fish sticks.  I didn't enjoy them as much, but the hubby just loved them.  How about Sloppy Joe?  Do you remember those?  Ground meat in a barbecue type sauce that is just smothered in cheese.  Oh my...what an easy dinner!  Delicious and fast!  I think your kiddos need to be introduced to these little dinner treasures.  If they already know about the Sloppy Joe, they're going to want some of this version for sure!  It involves your muffin tin!!!


Sloppy Joe Cups have a sweet and tangy barbecue sauce flavor and are served in a biscuit.  Throw in a salad and you're done.  A fast, fun dinner on the table in less than 30 minutes.



Ingredients:
1 1/2 lbs ground round meat
1/2 cup tomato sauce
1/4 cup barbecue sauce
2 Tbsp Worcestershire sauce
1/4 cup chopped yellow onion
1 package refrigerated biscuit tube
French fried onions
1/2 cup shredded cheddar cheese
Directions:
Preheat oven to 350 degrees.  Cook and drain meat in a pot.  Return meat to the pot, mix in tomato sauce, barbecue sauce, Worcestershire and chopped onion.  Place a biscuit in each muffin tin.  Press to form a cup shape.  Fill the cups with the meat mixture.  Cook in a 350 degree oven for 12-15 minutes.  Remove from oven and top with French fried onions and shredded cheddar cheese before serving.  


Serve with a side salad and dinner is on the table, start to finish, in 30 minutes.  
You can't beat that!
