Oatmeal Cookie Day

I am so glad you came back!
I bet you thought the celebrating was over with Pi Day and St. Patrick's Day.
No sireee.  The celebrating can continue with Oatmeal Cookie Day!
And, I am not sharing just an oatmeal cookie...it's an oatmeal cookie in pie form!
Let the celebrating begin!!!


Oatmeal Cookie Pie is LOADED!


Loaded with textures and flavors!


Oatmeal Cookie Pie has not just oats, but coconut, toffee chips and dark chocolate morsels.
Lots of goodness going on in each and every slice!

Ingredients:
1 pie crust
3 eggs
1/2 cup sugar
1/4 cup water
1/4 cup brown sugar
3 Tbsp melted butter
1 cup oats
2 Tbsp flour
1/2 cup sweetened coconut flakes
1/2 cup toffee chips
1/4 cup dark chocolate morsels
1/2 tsp cinnamon
Directions:
Preheat oven to 325 degrees.  Blend together eggs, sugar, water, brown sugar and melted butter.  Once well blended, stir in oats, flour, coconut, toffee chips, dark chocolate morsels and cinnamon.  Pour into pie crust.  Bake in a 325 degree oven for 40 minutes.  Remove from oven and cool for 15-20 minutes before serving warm.


Serving this pie warm is just the best!
If you really feel like celebrating, put a little scoop of vanilla ice cream on top...YUMMMMMY!
