Thai Chicken Pizzas

 I am so not happy about the weather.  We are supposed to reach a high of 1 degree today.  Nope, that isn't a typo.  These are the times I question why I live in such Arctic conditions.  Anyone else feeling the winter blues?

Let me focus on something else, after all, there's a holiday to be celebrating.  You know, The Year of The Sheep!  As you read yesterday, those of us born in The Year of The Sheep have a sketchy looking outlook according the Chinese Zodiac...something about staying away from sharp objects.  But, let's just push that fortune to the side and check out this Asian inspired pizza!

Thai Chicken Pizzas!!!

Thai Chicken Pizzas have a homemade, yeast free crust that is flavored with sesame oil, really giving it that Asian flavor.  The pizza crust is topped with a peanut sauce, chicken, mozzarella and chopped peanuts.  YUMEEEEEE!
Ingredients for pizza dough:
2 1/2 cup flour
2 3/4 tsp baking powder
1 tsp salt
1 Tbsp sesame oil
1 cup water
nonstick spray
Directions:
Preheat oven to 375 degrees.  Combine flour, baking powder, salt, sesame oil and water until a soft ball forms.  Knead for 3-4 minutes.  Break into 4 small balls.  Roll out to form pizza crust.  Spray a cookie sheet with nonstick spray.  Place the crusts on the greased cookie sheets.  Bake at 375 degrees for 10-12 minutes.
Ingredients for Thai Chicken pizza toppings:
1/4 cup peanut butter, creamy not chunky
2 tsp soy sauce
2 tsp rice wine vinegar
1 1/2 tsp ginger
1 Tbsp minced garlic
1 tsp sesame oil
1 Tbsp water
1 cup shredded mozzarella
1 cup cooked chicken, shredded
1/4 cup chopped peanuts
2 green onions, chopped
Directions:
To make peanut sauce, mix together creamy peanut butter, soy sauce, rice wine vinegar, ginger, minced garlic, sesame oil and water.  When well combined, divide up among 4 pizza crusts.  Top with cooked, shredded chicken, chopped peanuts and shredded mozzarella.  Sprinkle on some chopped green onions.  Bake in a 375 degree oven for approximately 15 minutes or until cheese is hot and bubbly.
