Shrimp Fried Rice in Wonton Wrappers

No sooner is Fat Tuesday over, but it is time for The Year of The Sheep!
Chinese New Year is a fun celebration!  People who were born in the following years 1907, 1919, 1931, 1943, 1955, 1967, 1979, 1991 and 2003 are thought to be kind hearted.  That's me!  I was born in one of those years.  I'll let you guess which one.  :)  Kind of fun to find out your Chinese fortune.  According to the Chinese zodiac, those born in the year of the sheep should stay away from sharp tools like knives, swords, saws and scissors because they may get easily injured this year.  Oh, boy...I better wear some bubble wrap for protection, at least for this year.  And, the financial fortune of sheep people will be just "so-so."  Hmmm...not liking the predictions for those of us born during the year of the sheep.  My fortune cookie fortune said I will have a great and prosperous year!  Oh my, I wonder what it means when you have two opposing fortunes.

Anyhow, I want to share with you a delicious Asian inspired meal...no take out needed!



Shrimp Fried Rice in Wonton Wrappers
Such a fun presentation for an old favorite!
inspired from the Food Network Kitchen
Ingredients to make 2 dozen:
2 cups water
1 cup Jasmine rice
2 eggs
pinch of salt
2 Tbsp butter
1 Tbsp soy sauce
1 tsp sesame oil
1/4 lb uncooked, peeled and deveined shrimp
1/2 tsp ginger
1/4 cup peas
2 scallions, chopped
wonton wrappers
nonstick spray
Directions:
Cook rice by bringing 2 cups of water to a boil.  Add 1 cup Jasmine rice.  Bring back to a boil.  Reduce heat to low, cover and simmer for 8-9 minutes or until rice has absorbed the water.  Fluff and set aside.  Whisk 2 eggs and pinch of salt.  Heat 1 Tbsp butter in a skillet.  Scramble eggs.  Remove from heat and set aside.  Chop raw, peeled and deveined shrimp.  In a skillet, heat 1 Tbsp butter, soy sauce and sesame oil.  Add the shrimp and ginger.  Stir fry until shrimp is pink and cooked through; approximately 3-4 minutes.  Add peas and scallions.  Cook an additional 1-2 minutes.  Stir in the fried rice and cooked/scrambled eggs.  Cook for an additional 1-2 minutes.
Preheat oven to 350 degrees.  Spray a muffin pan with nonstick spray.  Line each muffin cup with a wonton wrapper.  Scoop in some shrimp fried rice.  Bake at 350 degrees for 10-12 minutes.
