Raspberry Meringues

Boy oh boy has Valentine's Day come quickly!
Before you know it, St. Patrick's Day and Easter will be right around the corner.
Have you noticed that Easter candy is already in the stores?  I'm not sure how I feel about that.
Part of me is super excited because I am usually a holiday ahead due to recipe development, but the other part of me thinks we rush from one holiday to the next without fully experiencing the holiday of the present.

So today, let's celebrate the holiday that is a few days away.  You know the one filled with pink and red, strawberry, raspberry and chocolate recipes and a little, almost naked baby carrying a bow with heart arrows full of love, lurking around every corner(ok, that is actually a little creepy).  But, I am good with sweet treats lurking around every corner, so let's stick with the recipes...


Raspberry Meringues!
Raspberry Meringues have a crunchy exterior with a tender raspberry inside.

Meringues are really easy to make and you can make them in all kinds of flavors with the help of some flavored gelatin.  Since Valentine's Day is at the end of the week, let's go raspberry flavor!

Ingredients for 2 dozen:
3 egg whites
1/8 tsp salt
1 3oz pkg raspberry gelatin (like Jell-O or your store's brand)
1/2 cup sugar
1/2 tsp raspberry extract
Directions:
Preheat oven to 275 degrees.  Line baking sheets with parchment paper.
In a large mixing bow, beat egg whites and salt until frothy (about 1 minute).
Add the raspberry gelatin, sugar and extract.  Continue to mix until the eggs white mixture becomes stiff, about 5 minutes.
Drop by tablespoonfuls onto the parchment lined cookie sheets.  
Bake at 275 degrees for about 30 minutes.  Remove to wire racks and cool.


Raspberry Meringues are a skinny cookie!
Naturally low in calories since the main ingredient stars egg whites!
Since you'll be eatin' skinny cookies, maybe you could put on that cupid outfit?  That would be a scary look in my house...way too much pale winter skin.  Ha!
