Mini Baked Banana Coconut Donuts

I have been a busy donut making machine!
My first attempt with the donut pan came out fabulous!
If you haven't checked it out,

And if you thought those were good, you better sit down...with a cup of coffee, of course...

I tell ya, I am loving that mini donut pan!
If you don't have one...you really should...kidding...the recipe works fine in a muffin pan, just increase your cooking time.  BUT, if you have a pan, you will be making donuts like crazy and never need to visit a donut shop again!  So in the long run, I am helping you save money.  You're welcome!



The donuts are made from a donut bread recipe then dunked into a coconut bath with a final sprinkle of coconut.  I am in love with these cake like donuts!


Okie dokie, donut lovers, let's get baking!

Ingredients to make 2 1/2 dozen mini donuts:
1 cup sugar
1/4 cup unsalted butter, softened
2 eggs slightly beaten
2 bananas (really ripe ones are fabulous!)
2 cups Bisquick baking mix
cooking spray
1/2 cup coconut milk
1 cup powdered sugar
2 cups shredded, sweetened coconut
Directions:
Preheat oven to 350 degrees. Cream sugar and unsalted butter.  Add the eggs, bananas and Bisquick baking mix.  Mix until well combined.  Spray a mini donut pan.  Spoon batter into the mini donut pan.  Bake at 350 degrees for 14-15 minutes.  Meanwhile, mix coconut milk and powdered sugar.  Set aside until donuts have baked.  Remove donuts from pan and dunk into the coconut milk/powdered sugar mixture.  Sprinkle coconut on top.  Let cool on a wire rack.

Afterall, they are made with bananas and coconuts!
