Queso de Cabra

One of my absolute favorite restaurants is one that serves tapas.
I love the idea of bite sized appetizers and sharing with friends and family.
I always order a variety of tapas to experience all the different flavors.  
There is one tapas I always order and that is Queso de Cabra and it is so easy to make at home!
Check this out...



Toasted garlic bread dipped in marinara sauce and warmed goat cheese.  Queso de Cabra literally means goat cheese baked in tomato sauce.  You won't want to just dip.  I am thinking there will be some major scooping going on!  Here's how to make your own.

Ingredients:
1 baguette, sliced
1/4 cup olive oil
2 tsp minced garlic
8 oz goat cheese
1 cup marinara sauce

Directions:
Preheat oven to 375 degrees.  Mix together olive oil and garlic.  Brush over bread slices.  Place on a cookie sheet and bake for about 6-8 minutes or until toasty.  Remove from oven.

Flatten goat cheese into a 1/2" circle.  Place in a shallow dish.  Spoon marinara sauce around the goat cheese.  Do not cover the cheese with the sauce.  Just spoon sauce to edge of cheese.  Bake uncoverd for about 10-12 minutes.  When sauce is bubbly, the queso de cabra is ready.  Serve with toasted garlic bread.





I told you there'd be scooping.  The goat cheese is so creamy and is a wonderful combo with the 
marinara sauce.  You really need to give this a try.  
Add a glass of sangria and it looks like you've got yourself your own tapas party!
