Pumpkin Soup



Seasonal Simplicity is what this blog is all about!
This Pumpkin Soup recipe is perfect for the season.
I love how creamy it is as well as the subtle pumpkin flavor in each spoonful.
Easy pumpkin perfection!

Originally from Land O'Lakes
Ingredients:
1 14.5 oz can chicken broth
1/2 cup water
1/2 tsp salt
dash of fresh ground pepper
1/4 cup unsalted butter
1/4 cup chopped onion
1 Tbsp minced garlic
2 tsp brown sugar
1 15 oz can pumpkin pie filling
1 12 oz can evaporated milk
dash of cinnamon
Directions:
Melt butter in a large pot.  Add onion, garlic and brown sugar.  Cook for 2-3 minutes or until onion is softened.  Add the chicken broth, water, salt and pepper.  Bring to a boil and reduce to low heat.  Cook for about 15 minutes.  Stir in the pumpkin, evaporated milk and cinnamon.  Remove from heat and serve.



This soup is deeeelishus!  
I even think you could swap out the chicken broth and use veggie broth instead.
