Bobbing for Apples...Apple Cookies

Yum
Do you remember bobbing for apples?

Such a fun Halloween event as a kid.  I don't think I would even attempt it as an adult...the runny mascara look would not be good!  Maybe I would "bob" with goggles?  That would make a funny sight!

But, seriously...here is a recipe for apple cider caramel cookies...no goggles needed!

Apple Cider Caramel Cookies
These cookies are soft and chewy with flavors of apple and caramel!  What could be better this time of year?
I found this recipe at http://mooshujenne.com and changed some of the quantities because I was having some trouble with the cookie dough.  These changes fixed the dough and didn't harm the taste at all.  The recipe makes about a dozen large cookies, but the cookies are rich so you will probably only need one...or not?

Here we go...
3 cups of flour
1 Tbsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 stick of melted butter
1/3 cup apple cider
1 1/2 cups light brown sugar
1/2 cup sugar
2 eggs
1 granny smith apple, chopped into tiny pieces
1 bag of caramels, split the caramels in half

Preheat oven to 325 degrees.  Grease cookie sheets.
Combine flour, baking soda, cinnamon and salt.
Melt butter in the microwave.  Add brown sugar and white sugar to the melted butter.  Mix in the apple cider and eggs.  Fold in the chopped apple pieces.  Add the wet mixture to the dry mixture.  If you find the cookie dough to be too moist for rolling, add more flour.  If it is too dry, add a bit more apple cider.  Once the dough is the right consistency, roll the cookies into 3/4 inch balls with half the caramel candy in the center of the cookie ball.
Place the caramel filled cookie onto the greased cookie sheet.  Keep cookie balls spread far apart because they will spread while baking (only do 5-6 cookies per cookie sheet).
Bake for 12-15 minutes.  Remove from oven and cool on the baking sheet for 2 minutes before removing to a wire cooling rack.  Cool completely.

These cookies are so gooey good!  Get a tall glass of milk and "bob" for the cookies!  You will so be in fall cookie heaven!!!  (You know there is such a place!)

Caramel Soaked Apple Cider Bundt Cakes

Yum
Hi there!
Last night we attended the Farm Aid Concert in Chicago.  Do you remember the first Farm Aid way back in 1985?  I remember watching it on t.v. when I was a teenager.  Well, it finally made it to Chicago and the hubby and I went.  My husband has been dying to see Willie Nelson in person, being that Willie was one of the founders of Farm Aid.  So we made the trek down to the city, stood among 37,000 fans...in the mud I might add...until Willie performed at 10:45.  That's 10:45pm!  Waaaaay past my bedtime!  The hubby saw Willie on a screen since we were way far back with the other 36,000 (about a 1,000 fans were up close).  And did I mention the mud?  All in all, we heard some great music, had some great opportunities for people watching and supported a great cause.  I do have to say, there was a super good looking farmer or rancher just feet away.  I assume he was that.  Totally made a judgement call based on how he was dressed...ha!  It made walking and standing in mud just a teeny bit better.  :)  And the hubby was super happy to have been in the presence of Willie...even if he we could only see him on a screen.
So, in a nutshell...this post is coming out a lot later than normal.  A girl needs her beauty sleep and her church time.  Let me tell you though, it's worth the wait.  Check out these scrumptious beauties!

Caramel Soaked Apple Cider Bundt Cakes are little pound cakes soaked in a caramel apple cider sauce.

I love how the pound cake soaks in the caramel apple cider flavor yet isn't soaking wet.
It absorbs just the right amount of apple cider flavor.

See, I told you it was worth the wait!

Ingredients to make 18:
1 box pound cake
1/4 cup unsalted butter, softened
2/3 cup apple cider
2 eggs
1 tsp cinnamon
non-stick spray
Directions:
Preheat oven to 350 degrees.  Blend all the ingredients on low for 30 seconds then on medium for 2 minutes.  Spray mini bundt pan with non-stick spray.  Pour batter into each mini bundt cup, about 2/3 full.  Bake at 350 degrees for 23-25 minutes in a 350 degree oven.  Remove from oven and cool.
Ingredients for caramel:
1 cup apple cider
1/2 cup vanilla ice cream
1 cup brown sugar
1/2 cup unsalted butter
Directions:
Bring apple cider, unsalted butter and brown sugar to a rolling boil.  Reduce heat and simmer for 18-20 minutes.  Add the vanilla ice cream and cook and additional 2-3 minutes on low.  Cool.

Dip each apple cider pound cake into the homemade apple cider caramel.  Let sit out for 10-12 minutes before serving.
Store extras in the refrigerator.

All those fall flavors in your very own little cake.  You'll want to be licking the plate of this dessert!
If you don't have a mini bundt pan, you can certainly use a muffin pan.  And, if you have leftover caramel sauce?  Save it in your refrigerator for ice cream or sneaking spoonfuls!

Oh, I know you are wondering about the handsome farmer?  Yep, I did it!  I snuck a picture of him so Farm Aid will always stay close in my heart.  Tee...hee...hee.

Christine

Tree Trimming and Warm Apple Cider Floats

Yum
Finally, FINALLY!
We can DECORATE for Christmas.
I don't really like when stores have out their Christmas decor before Halloween has even been celebrated, but once November rolls around...I start to get the holiday itch!  Even the weather has been telling me Christmas is near.  I do purchase a few holiday decorations here and there.  Yet, they stay in bags until after the great feast has been completed!  Well, let me tell you...when I host Thanksgiving, as soon as the last guest leaves, the Thanksgiving decorations are put away so that first thing in the morning I can start decorating for Christmas.  Boy that was a long sentence!  But that is me...non stop holiday action!  The curtain has barely come down on Thanksgiving and I am ready for Christmas!

So today we are decorating our Christmas tree!

Warm Apple Cider Floats

Hang an ornament, take a sip, repeat...
You will want to wrap your hands around this delicious drink filled with fresh apples!

Ingredients:
6 cups apple cider
3 apples, chopped
2 Tbsp ground cinnamon
1/2 tsp ground nutmeg
4 Tbsp caramel
vanilla ice cream
cinnamon sticks
Directions:
Heat apple cider, apples, cinnamon, nutmeg and caramel in a large pot.  Once hot, ladel into mugs. Top with a scoop of ice cream, a dusting of cinnamon and a cinnamon stick.

Time to get those chestnuts roasting on an open fire and the decorations out!
Tis the season!!!
