Maraschino Cherry Muffin Waffles

Love is in the air!
February has begun and so has the waltz to Valentine's Day!
I just know there is a special someone that absolutely adores you!
That special someone doesn't need to be a two legged human.  You know it could even be a furry or feathery pet.  Cupid is busy because the air is thick with love and to show my appreciation, I not only have a sweet Valentine recipe but I also have my first giveaway!  So keep reading to learn all the details.  First things first...Maraschino Cherry Muffin Waffles straight from the heart!


A simple two step process of baking and then using your waffle maker really kicks this recipe up a notch.  Serve for breakfast, in a school lunch or a special dessert on Valentine's Day.


Bits of maraschino cherries in each and every bite!


A dusting of powdered sugar keeps this treat simple but yummy!

Ingredients to make 6 heart shaped muffins or 8 regular muffins:
1/4 cup granulated sugar
1/4 cup unsalted butter, softened
1/2 cup milk
1 egg
1 1/4 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp almond extract
1/3 cup maraschino cherries, drained and chopped
2 tsp maraschino cherry juice
nonstick spray
powdered sugar
Directions:
Preheat oven to 350 degrees.  In a mixer, cream together sugar and butter.  Add the egg and milk. When well combined, add flour, baking powder and salt.  Mix in the almond extract and maraschino cherry juice.  Fold in the chopped maraschino cherries.  Prepare a 6 heart shaped pan or a regular muffin pan with nonstick spray.  Spoon batter into each heart shaped muffin cup or regular muffin cup.  Bake at 350 degrees for 18-20 minutes.  Remove from oven and let sit 2-3 minutes before removing from pan.  Heat waffle maker.  Once hot, place muffins into waffle maker and press down for 1-2 minutes until pressed into a waffle.  Dust with powdered sugar and serve.


The waffle maker helps to create crispy areas on the outside while maintaining the moist inside.
You could stop at just making the muffins, but then they wouldn't be Muffin Waffles which are waaaaay better!
