Grilled Key Lime Chicken

Grilling season has arrived!
Well,we grill all year, despite the temps, but there's just something about the official start of grilling season.  Grilled meats and veggies on the grill just taste of summer.  Maybe that's why we like to winter grill...winter denial.  Any whoooo, This is an old favorite that you might have missed.  It's got a fresh key lime citrus flavor and is put together in a flash.  Go get your grill stoked up!





Ingredients:

3 tablespoons soy sauce

2 Tbs. honey
1 Tbsp vegetable oil
4 Tbsp key lime juice
1 Tbsp minced garlic
4 skinless, boneless chicken breast halves
Directions:
In a small bowl combine soy sauce, honey, vegetable oil, key lime juice, and garlic.  Cut chicken into large chunks (kabob size) and place into marinade.  Cover and refrigerate for about 20-25 minutes.
I used metal skewers, but you can use bamboo skewers.  If you use the bamboo skewers, soak them in water while the chicken is marinating.  This will help the chicken to slide off the skewer.
Fire up your grill.
Remove the chicken from the marinade and skewer.
When the grill is ready, grill the chicken skewers on medium high heat for 6 to 8 minutes on each side or until juices run clear.

Oh my gosh!  Wait until you smell these kabobs while they are grilling!
A light key lime citrus flavor that goes throughout the tender pieces of chicken.  Flavorful and juicy! Just add some brown rice and a salad.  
Looks like the first of many delicious outdoor cooked meals coming your way!  Better get some charcoal or more gas for your grill 'cuz you are going to want to get outside and absorb ALL the food that comes with warmer temps!
