Peppermint Custard Pie




Peppermint Custard Pie
One can really not have enough peppermint during the holiday season, right?
I know I can't.
I think my kitchen has been dusted in a layer of peppermint.  How about yours?
Seems like my oven has been running around the clock!  Cookies, decadent breakfasts, peppermint desserts, egg nog goodies and gingerbread yummies are being produced like there is a frentic assembly line of baked goods coming out of the kitchen!  Funny, I haven't heard one complaint!  The family is reaping all the rewards and they throughly loved this Peppermint Custard Pie.



This recipe is adapted from Coffee-Mate
Ingredients:
4 eggs, separated
1/2 cup sugar
1/4 cup brown sugar
1 Tbsp water
1/2 cup melted, unsalted butter cooled
1/2 tsp peppermint extract
3/4 cup flour
1 1/2 cups 2% milk
1/2 cup peppermint mocha flavored creamer
1 tsp white vinegar
1 Tbsp powdered sugar
Directions:
Preheat oven to 325 degrees.  Spray a round baking pan with non-stick cooking spray.
Beat egg yolks, sugar, brown sugar and water until creamy.  Slowly add in melted, cooled butter and peppermint extract.  Mix until well combined.  Add the flour and mix completely.
Add the milk and peppermint mocha flavored creamer just a little at a time.  Batter will be very runny.
In a separate bowl, beat egg whites until frothy.  Add vinegar and beat until stiff peaks form.
Fold the egg white mixture into the batter.  Pour into prepared round baking pan.  Bake for about 50-60 minutes or until the top is lightly browned but center isn't solid.  Cool in pan on a wire rack.  Then refrigerate before serving.  Dust with powdered sugar right before serving.



Peppermint Custard Pie is light with a wonderful peppermint infused flavor.  The pie has a nice top crust that forms while baking.  Besides...it looks delicious!
