National Cookie Day

Today is National Cookie Day!
So I did my research, like good bloggers do, and found out a little bit about the origin of the cookie 'cuz you never know when you might need to have that bit of information.
According to one source, the word cookie came from the dutch word koekje, meaning little cake.
Bakers used to test the temperature of their ovens by placing small amounts of batter in the oven.  If the bit of batter cooked right, the baker knew the oven was ready to bake an entire cake.  Apparently one baker tasted the bit of cooked batter and discovered how good it tasted, hence the cookie was born.
You can thank me when you are on Jeopardy and know the answer to the question about how the cookie came about and I will request some of the prize money when you win.  :)
Anyway, to celebrate National Cookie Day (like you really need a reason) I thought I would share a simple cookie recipe that is perfect for the season...yes, it was part of the sugarplum sweet dance that had been taking place in my mind and kitchen for the past few weeks.

Sometimes simple is good, so check these ol' favorites out!



Ginger Cookies
Grab a glass of milk 'cuz you are going to want some.

Ingredients to make 2 dozen:
2 1/4 cups flour
2 tsp baking soda
1 tsp ginger
1 tsp cinnamon
3/4 cup unsalted butter
1 cup packed brown sugar
1/4 cup molasses
1 egg
1 cup granulated sugar
Directions:
Preheat oven to 350 degrees.
Stir together flour, baking soda, ginger and cinnamon.
In a separate bowl, cream butter and brown sugar.  Add egg and molasses.  When well combined, add the flour mixture.  Beat well.  Chill for 1 hour.
Roll into 1 inch balls.  Roll in granulated sugar.  Place on an ungreased cookie sheet.  Press down each ball with the bottom of a glass.  Bake at 350 degrees for 10 minutes.
Cool on a wire rack.


The aroma while these Ginger Cookies are baking is absolutely divine!
You may just reach in your oven and grab one!  I suggest you don't do that...self control...you'll just have to wait...just like waiting to open the presents under your tree.  You can't peek through the wrapping paper, not that I have done that, but I have heard others do.  :)  Patience is a virtue and these cookies will be worth the 10 minute"ish" wait.
