Loaded Potato Soup

This soup is a re-run from one of my earlier posts,
back in my photography "dark ages."  The pictures never did this soup justice, so I wanted to bring it back "soup"ed up.  IT'S LOADED!

LOADED POTATO SOUP


Loaded Potato Soup is so creamy, rich and an absolute breeze to make!
No potato peeling needed 'cuz you/me are going to cheat!  It all starts with a box of scalloped potatoes.  Check it out!



Ingredients:
3 1/2 cups water
1 (7.8 oz) pkg creamy scalloped potato
3 cups milk
1 8oz sour cream
Toppings:  shreeded cheddar cheese, chopped green onions, bacon bits and kettle potato chips
Directions:
Bring the water to a boil.  Crumble potatoes and add to the boiling water.  Mix well.
Cover and simmer for about 15 minutes.
Stir in milk and contents of sauce mix from packet in potato box.  Reduce heat to medium low and cook for 5-8 additional minutes or until thickened.  Stir frequently.
Stir in sour cream and mix well.  Top with toppings.
Loaded Potato Soup will warm you all the way to your bones.
I love adding all the toppings.
It's TOTALLY LOADED BABY!
