Banana Oatmeal Cookies with Bananas Foster Topping

I just died a little when I made this dessert.
Oh my goodness!
It all started while with making some banana oatmeal cookies.
Out of heaven knows where, I began craving bananas foster.
I had the cookies, bananas and ice cream.
Voila!
A dessert to drool over!!!
Banana Oatmeal Cookies with Bananas Foster Topping


It all started with these delicious banana oatmeal cookies.  I just added vanilla ice cream and topped it with bananas foster made without the rum.  A dessert worthy of the gods!





This recipe makes 1 dozen large banana oatmeal cookies.  Let's start with the cookie recipe.

Ingredients for Banana Oatmeal Cookies:
1/2 cup unsalted butter
1 1/2 cups sugar
1/4 cup brown sugar
1 Tbsp honey
2 eggs
1 tsp vanilla extract
1 3/4 cup flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
2 cups uncooked, regular oatmeal
1 banana

Ingredients for Bananas Foster:
1/4 cup unsalted butter
2/3 cup brown sugar
3 1/2 Tbsp lemon juice
1 1/2 tsp vanilla
1/2 tsp cinnamon
1-2 bananas sliced

Directions:
Preheat oven to 375 degrees.
Beat butter until creamy.  Gradually add in both sugars and honey.  Add the eggs, banana and vanilla.  Beat well.
In a separate bowl, stir together flour, salt, baking soda and cinnamon.  Gradually add the the butter mixture.
Stir in the oatmeal.
Place large spoonfuls of dough onto a greased cookie sheet.  Bake at 375 degrees for 8-10 minutes.  Cool on cookie sheets for 5 minutes, then remove to a cookie rack to cool slightly.  Serve warm with vanilla ice cream and bananas foster.

For the Bananas Foster, melt butter in a large saucepan over medium low heat.  Add brown sugar and stir until dissolved.  Add vanilla, cinnamon and lemon juice.  Stir in the sliced bananas.  Cook 3-5 minutes until cooked down and thicker.  Pour over ice cream over cookie.

I didn't bake the cookies in the skillet, but I thought they looked so stinkin' yummy in these mini cast iron skillets...I served them that way.  The cookie is warm and when the bananas foster is poured over top...YUM!  I sprinkled a few pecan chips on top to complete the dessert.  But the bananas foster turns caramelly; probably not even a word but so works :)  Each bite make you die a little bit!
