Apple Cinnamon Chip Cookie Sandwiches

I know, we barely finished Labor Day weekend and I am on to apple recipes.  Normally I don't rush these kinds of things.  But, I have to tell you...I am so tickled with this recipe!



Apple Cinnamon Chip Cookie Sandwiches say September and to me, September is all about apples!

 



These apple flavored cookies are soft and contain bits of cinnamon chips.  In between, there is a cinnamon buttercream frosting!!!  See why I am tickled?  These cookies will become the apple of your eye!  So easy to make and all the flavors of the season...totally seasonal simplicity, right?  Here's how you make 'em.

Ingredients to make 18 cookies for 9 cookie sandwiches:
1 8oz package apple cinnamon muffin mix
1 Tbsp vanilla pudding mix
2 Tbsp quick oats
1 Tbsp melted butter
3 Tbsp milk
1 egg
1/2 tsp vanilla
1/4 cup cinnamon chips
Ingredients to make the cinnamon buttercream icing:
1 cup powdered sugar
1/2 cup butter, unsalted
1/4 tsp cinnamon
1 Tbsp brown sugar
2-3 Tbsp milk

Directions:
Preheat oven to 350 degrees.  Grease a cookie sheet.  Mix together all the cookie ingredients.  Drop by rounded spoonfuls onto greased cookie sheet.  Bake for 10 minutes.  Let sit on pan for 1-2 minutes before removing to a cooling rack.
While cookies cool, mix together all the ingredients to make the icing.  Sandwich the icing between 2 cooled cookies.




I bet you didn't realize that the base was a muffin mix?  Told ya they were easy!
Dump + mix + bake = one heck of a good September Cookie



BTW, ignore the old looking fingers...I really need to get my hand model (daughter) back.  Stare at all the deliciousness (love making up words) in that cookie.  The cookie has all the flavors of September with apples and cinnamon.  The icing?  Well, that just pushes that cookie into a top spot.
