Meatball Sub on a Stick

I have 2 daughters.  One is a sophmore in college and the other is a junior in high school.  Both are raised by the same parents.  One is super picky, to this day, about what she eats and the other will eat just about anything.  They both are "Dippers."  A "Dipper" is someone who loves to dip whatever they are eating into some sort of sauce.  Yes, I have coined that term, you won't find it in Webster's.  And yep, chicken nuggets and ranch were staples in our house.  You know what?  The super picky one is still a "Dipper."  I am apologizing now to her future spouse.  Not sure what happened in the child rearing department.  They both came from the same parents...nature vs nurture?  Ha Ha!  Kids, in the same family, can be totally different.  This is a fun recipe that I am sure will please even the pickiest of eaters!

Meatball Sub on a Stick!
These are so fun!
A great idea for back to school weeknight dinners when you want something fast and
something the kids will love.  You know there will be some dipping going on...a kid favorite, right?
This idea originates from Pillsbury and can be even quicker if you start with premade meatballs, which I have been known to do (don't judge).  The ingredients are simple, but it takes a little practice to get the skewered effect.  But, I have confidence that you can do it too!

Ingredients:
1 package of Pillsbury breadsticks
32 meatballs (home-made or defrosted)
1 jar of pasta sauce
16 wooden skewers

Hook one end of the breadstick on the end of a skewer.  Slide on an uncooked meatball.

Slide one or two more meatballs onto the skewer, then wrap the breadstick around the meatball in an "S" formation.  The breadstick DOES NOT get skewered onto the wooden skewer until the very end.  Then push it through.  It is just wrapping around the meatballs.

Place in a preheated 375 degree oven for 18-20 minutes.  Watch to make sure breadstick doesn't burn and meatball gets cooked.

Serve with warmed pasta sauce and let the dipping begin!

I bet your kiddos will get their homework or chores done lickity split when they know this is what they are having for dinner.

Celebrate the little things that make life sweet,
Christine
