Chocolate Cherry Cookies



Does that not say afterschool snack or what?
These cookies are not only delicious, they are also healthy.
GASP!!!  How can that be?
Well, they are chocolate cherry cookies and wait until you see what is in them.
Your kiddos will beg you for more...even the big ones (aka the hubby).



Chocolate Cherry Cookies are a delicious chewy cookie chock full of bittersweet chocolate and dried cherries.  AND, they aren't just made with white flour, but they have some whole wheat flour in there too.  Each cookie has just a little bit of fat!  So they are heart smart and good in your bellies!  Enough jibber jabber, let's get to the recipe.

Ingredients:
1/3 cup all purpose flour
1/3 cup whole wheat flour
1 1/2 cups old fashioned rolled oats
1 tsp baking soda
1/2 salt
6 Tbsp unsalted butter
3/4 cup light brown sugar
1 cup dried cherries
1 tsp vanilla extract
1 egg, beaten
2/3 cup chopped bittersweet chocolate chunks
cooking spray

Directions:
Preheat oven to 350.  Combine flours, oats, baking soda and salt in a large bowl.  Set aside.
Melt butter in a saucepan.  Remove from heat and add brown sugar.  Stir until well blended.
Add the sugar mixture to the flour mixture.  Beat until well blended.
Add the cherries, vanilla and beaten egg.  Beat until combined.  Fold in the chocolate.
Drop by teaspoonfuls onto a greased cookie sheet.  Bake at 350 for 12-13 minutes.  Let sit on pan for 2-3 minutes before removing to a cooling rack.
Makes 24 cookies




Come on, you know you want to dunk it.  Have some Chocolate Cherry Cookies and a glass of milk ready for when your kiddos get home from school/your hubby gets home for work and they will soooo love you.  Don't even tell them they are healthy.  That can be your little secret.  If you give a kid a cookie, they'll want a glass of milk and....well, we all know where that leads.  Cookie Joy!
