Bucket O'Cheesy Fries

BUCKET O' CHEESY FRIES

Kind of self explanatory, don't ya think?
I remember the days when you went to McDonalds and ordered a burger and some fries.  The burger came in a styrofoam boxed container that when you flipped the lid back, you had a place to dump your fries.  An all in one serving "plate."  Don't laugh, but that was a HUGE deal to me when I was growing up.  Such small pleasures, right?  No more styrofoam containers, now-a-days, and we share fries...gotta watch my girlie figure!  :)

Now, I love to make fries at home because I bake them in the oven.  Just slice them up, any which way.  Toss with some olive oil and salt, bake them in the oven until fork tender and you are good to go.  But, when you want to kick it up a notch and not worry about your girlie figure...
you need to make a BUCKET O'CHEESY FRIES!!!  
It'll be like you are at a the county fair!



Here's how to make that bucket of goodness...

Ingredients to make fries:
2 - 3 lbs red potatoes
1/4 cup olive oil
1 Tbsp salt
1 Tbsp fresh ground pepper

Ingredients to make them cheesy:
1/2 cup sour cream
1 5.3 oz plain Greek non-fat yogurt
1 packet dry Ranch Dip mix
1 cup shredded cheddar cheese
1/4 cup chopped green onions

Wash all the potatoes.  Preheat oven to 400 degrees.  Slice in wedges, small "fingers" or discs.  In a large roasting pan, place the potatoes and mix with olive oil, salt and pepper.  Place in the oven and bake for about 50-60 minutes depending on the size of your potato slices (thicker takes longer).

Mix together  sour cream, non fat Greek yogurt and Ranch Dip mix.  Toss with potatoes and return to oven for about 5-10 minutes.  Remove from oven and sprinkle on shredded cheddar cheese and green onions.



These fries are sooooooo gooooood!
The sauce is finger lickin' and the cheese is ooey and gooey!
I really think you NEED these fries!
Great for football watching, hamburger grilling or anytime you just have a craving!
