Grilled Pork with Strawberry Salsa

Went a little crazy at the farmer's market over the weekend.  
Can you tell what I got a lot of?

STRAWBERRIES!

So I ran across a recipe that I love from Southern Living 2012.


Grilled Pork with Strawberry Salsa
Looks so refreshing, right?
Avocado and dried cranberries with strawberries all coated in pepper jelly.  You have no idea just how good that combination can be.  The Strawberry Salsa works well on grilled pork, but would also work well on grilled chicken.

Ingredients for Strawberry Salsa:
3 Tbsp Hot Pepper Jelly
1/4 cup fresh chives, chopped
4 Tbsp lime juice
2 cups chopped fresh strawberries
1/3 cup dried, sweetened cranberries
1 small avocado, chunked

Mix all ingredients together and spoon onto cooked meat.  




The combination of flavors on pork is quite good.  It is also so pretty, don't you think?  You know we eat with our eyes!  Those of you who don't like spicy foods, the hot pepper jelly does not make the strawberry salsa spicy.  It seems to actually bring out the flavors of all the ingredients.  I don't know why, just does.  

If you are looking for something to make your grilled meat a little extra special, you may want to give this a try...especially if you are looking for a unique way to use up all your strawberries.  After all, it is seasonal and simple!
