Fruit Salad with King's Hawaiian Bread Coconut Croutons

I love KING’S HAWAIIAN®!
Using it for French Toast is my absolute favorite!
So when I attended Food Blogher 2014 Miami, I was so excited to see them there.

KING’S HAWAIIAN® has such a wonderful flavor and is quite the treat when you add it to a meal.  The bread is sweet and totally says Aloha!
And, if you haven't tried my Hawaiian French Toast, you will love it with KING’S HAWAIIAN® Sliced Bread.
I am  "pupule" about this fruit salad...which means I am passionate about it...you have got to try this...


FRUIT SALAD 
WITH KING'S HAWAIIAN BREAD COCONUT CROUTONS!

Oh my!
Such a refreshing treat that can be used at a picnic, as a side dish or as dessert.  The fruit is tossed in a coconut lime dressing that is so yummy.  But, check out the croutons, that is really where the party is happening.  KING’S HAWAIIAN® as Coconut Croutons take on a pound cake like texture and add such a wonderful element to the fruit salad.  The sweet flavor of the toasted bread with toasted coconut...do I need to say more?  YUM!

Ingredients for fruit salad:
2 cups strawberries, chopped
2 kiwi, chunked
1 cup blueberries
2 bananas, sliced and chunked
1 papaya, sliced and chunked
1/4 cup coconut milk
1 Tbsp lime juice
2 Tbsp sugar

Ingredients for KING’S HAWAIIAN® Coconut Croutons:
1/2 round loaf KING’S HAWAIIAN®, cubed
1/2 cup melted butter
1 cup sweetened coconut flakes (shredded coconut)

In a large bowl, mix together all the cut up fruit.  Set aside.

In a small bowl, whisk together coconut milk, lime juice and sugar.  Whisk until sugar dissolves.  Pour over fruit.

Heat oven to 400 degrees.  Lightly grease a 9 x 13 inch pan.  Add the cubed KING’S HAWAIIAN® bread to the pan.  Drizzle the melted butter over top and toss.  Add the coconut and toss again.  Place the pan into the oven and toast the bread for 20-25 minutes.  Stir every 7 minutes to prevent burning.  Remove from oven when the coconut croutons are lightly browned.  Cool.

Once the bread cubes have cooled, toss in the fruit salad and serve.



This is a perfect summer recipe that works as a side dish or as dessert.  I am thinking about how wonderful this would be at a brunch.  Those KING’S HAWAIIAN® Coconut Croutons are totally addicting!
