Raspberry Danish

I love breakfast foods and this one is a keeper!



Wouldn't this be awesome for a brunch?  Breakfast?  Mother's Day?  Tea time?  Really...anytime?



Wait 'til you hear how easy!

Ingredients for danish:
12 frozen dinner roll balls (thaw them overnight in your refrigerator)
1 bag of frozen raspberries
4 oz cream cheese
5 Tbsp sugar
zest of a lemon

Ingredients for icing:
1/4 cup heavy cream
1 cup powdered sugar
1 tsp vanilla

Dinner rolls balls should be defrosted.  Once they are defrosted, flatten each and place on an ungreased baking sheet.
With a blender, mix together cream cheese and 3 Tbsp of sugar.  Spread on flattened dough circles.
Place 3-5 frozen raspberries on top.
Bake at 375 degrees for 12-15 minutes.  Remove from oven and let cool 5 minutes before removing from pan.
Sprinkle the remaining 2 Tbsp of sugar over the tops of the warm raspberries of each danish.
For the icing, mix together heavy cream, powdered sugar and vanilla.  When well blended, drizzle over the top.
Makes 12 danish




The danish has a slightly crunchy bottom with such a flaky texture throughout the rest of the danish!  A wonderful combination.  It's sweet from the sugared cream cheese and the raspberries provide just a bit of tang.  Oh my goodness, they are so good!

Other than remembering to thaw the frozen dinner rolls overnight, the recipe is a really quick one to whip up in the morning.  Your family may even think you ran to the bakery!  Get one of those white bakery boxes and they'll never know...better yet, let them know you made them and that you are quite the master chef!
