Key Lime Puppy Chow

Well, we have slid back a little, but the temps are still fabulous.  Dare I say winter is really over?  I have probably cursed the entire Midwest with a snowstorm?!

All these touches of summer weather have been putting me in a summer time mood and summer makes me think of the fresh citrus flavors of key lime and lemon.  But for the next few posts, I am focusing on the key lime.


I can get key limes up here in the Midwest, but I usually rely on Nellie's Key Lime juice.  That works just as well.  A key lime tree would work too, but that pesky season, WINTER, doesn't allow for it.  :)

So let's start this series with a yummy snack mix, Key Lime Puppy Chow.

Here's how you make it...

Ingredients:
1 cup powdered sugar
4 cups Chex cereal
About 1 cup graham crackers broken into pieces similar in size to the Chex
1½ cups white chocolate chips
2 Tbsp unsalted butter
1 tsp vanilla extract
1 Tbsp key lime juice

Place powdered sugar in a large zip top plastic bag and set aside.
Gently toss together the Chex and graham cracker pieces in a large bowl.
Combine the white chocolate chips, butter, vanilla and key lime juice in a bowl.  Gently melt in the microwave or over a double boiler. If doing it in the microwave, use 50% power and stir every 15-30 second until melted. It may look slightly thick and clumpy.
Pour chocolate mixture over the Chex mixture and gently stir and toss until fully coated, breaking up any large clumps that may form.
Transfer the cereal mixture to the plastic bag with the powdered sugar seal and toss until fully coated.
Pour out onto waxed paper and allow to cool and harden.
Store in an airtight container.



The white chocolate combined with the graham crackers and a hint of key lime is very refreshing...kind of hard to stop eating!  I think you will really like the combo!

Time for summer...really!  I think us Midwesterners deserve it and this puppy chow sure tastes like it!
