Coconut Pecan Granola

Start the new year off right!


Time for fresh, clean eating.  In January, I am all over citrus and coconut.  I think the cold temperatures have me longing for warm, tropical flavors found on the islands.  Winter has actually been super easy this year...I probably just cursed the snowflake fairies into creating major winter storms.  Anyhow, easy or not, I still long for those tropical flavors.  Best way to wake up on a cold, cloudy, winter day?  A bowl full of yogurt and crunchy Coconut Pecan Granola.



Making your own granola is easy.  While it is baking in the oven, the aroma is AMAZING!
It stores in an airtight container in your pantry for up to 2 weeks.  Fresh, home-made goodness in your pantry.  And, that toasted coconut really gives it that tropical vibe.

   
Ingredients:
3 cups uncooked regular oats
1 1/2 cup unsweetened coconut flakes
3/4 cup chopped pecans
1/4 cup honey
1/2 cup unsalted butter, melted
1/2 cup lightly brown sugar
3/4 tsp ground cinnamon
Directions:
Preheat oven to 300 degrees.  In a large, flat, oven proof pan, mix together 3 cups oats, 1 cup unsweetened coconut, chopped pecans, brown sugar and cinnamon.  Mix honey with melted butter.  Pour over granola mixture.  Toss to coat. 
Sprinkle with cinnamon.  Bake at 300 degrees for 40 minutes, stirring at 10 minute intervals.  Remove from oven and cool.  Add remaining 1/2 cup unsweetened coconut.  Stir until combined.  Store in an airtight container for up to 2 weeks.


Just add some fresh fruit, yogurt or milk and you will have a yummy breakfast.  Sweetened with just some honey and brown sugar which is great!  I keep mine in mason jars so breakfast is quick and easy.  The addition of coconut keeps me in a warm state of mind.
