Apple Inspired Autumn Breakfast

Wednesday is that day that I see the end of the week in sight.
Mondays and Tuesdays seem to drag.  But, by Wednesday I see the light at the end of the tunnel.
Anybody else like that?  Or are you the person that goes to bed on Sunday evening all excited for Monday?  That's just not me.  Once Wednesday rolls around, I do start doing the happy dance and thinking about the weekend...which ALWAYS involves food.  This weekend I am going to celebrate the end of September with a farewell Apple Inspired Autumn Breakfast because...you know what's next...PUMPKINS!

I know you still have apples just waiting to be used, so why not create a whole Apple Inspired Autumn Breakfast?
Apple Cider Duffins, Cinnamon Apple Granola Yogurt Cups and warm Apple Cider Floats will complete the menu.  What a way to celebrate the weekend and the end of September!  Being that it is Wednesday, plan now so that you will be ready.  Besides, it'll give you something to look forward to.
Maybe even invite some family friends over?

Cinnamon Coffee Creamer

I think our house is surrounded by a battalion of squirrels.  Squirrels on the ground and up in the trees, beady eyes just staring in at me. Every corner I turn...squirrels.  The multitude is feverishly scurrying about digging holes for all their nuts.  They scare the daylights out of me when I am out in the yard and are driving our indoor cat crazy.  All this squirrel activity makes me very nervous.  I don't like squirrels too close to me (I have a phobia about the critters) and all this activity makes me think all this unseasonable warmth is coming to an end.  I think a hot cup of coffee with a delicious cinnamon creamer is in order.  The coffee won't make me jittery at all...what was that?  I think I just spotted a squirrel peering in my window...better make it a double shot of coffee and cinnamon cream.


Making your own creamer is easy to do.  You control the ingredients!
If you made your own creamer label there would be a list of 4 ingredients and each one you could actually pronounce.  How about that?



Ingredients:
sweetened condensed milk (14 ounces)
1/3 cup milk
1/2 tsp vanilla extract
1/2 tsp cinnamon
Directions:
Whisk together all ingredients.  Refrigerate.  Store leftover in the refrigerate for 7-10 days.

I love the creaminess in each drop.  The cinnamon flavor is perfect for making the coffee taste extra special and just right for the fall.
Grab yourself a cup of coffee or tea with your own Cinnamon Coffee Creamer.  Sit a spell on your deck and watch the leaves falling...beware of lurking squirrels!  Don't laugh...there is a real named phobia for fear of squirrels. :)
I'll be doing just that.  Relaxing with my cup of coffee while keeping a wary eye out for visions of fur.

Touchdown Scoring Dips, Wings and Snacks

Our neighborhood's high school is a relatively new one.  It has been open for just 6 years.
My oldest was the first graduating class that attended all four years there and my youngest is going to graduate from there this coming spring.  Football season has been a tough one.  Each year, teams have come in and just trounced us.  But, little by little the football team has been getting better.  This year they are actually good enough to enter into the division that holds all the local teams.  So the thought this year was that the team would again have trouble competing with the big teams.  Well, that just hasn't been so!  Friday night was no exception.  Big cross-town rivalry and we WON.  It has been six long years!  Such excitement for the school.  Kind of nice to have it all happen the last year before we will no longer have children in the school system.  I guess patience is key!

S'more Round Up

We have had some beautiful weather around here.
Warm sunny days and cool evenings where just a light jacket is needed.
Such perfect fall days!  No complaints around here...that's for sure.
All this delightful weather has put me in a s'more baking kind of mood.
No fire pit needed for these goodies!


All of these s'more recipes are made in your oven.
Beautiful or crummy weather?  No worries.  S'mores can be made right in your kitchen.

Grasshopper S'more Bites
Minty flavored s'mores in little bite sized packages.  
Just look at the oooey, gooey melted marshmallow. 

Loaded Pizzelle S'mores
S'mores with pizzelle cookies then topped with ice cream for an extra special s'more to love! 


Pound Cake S'more Slice
Grab a slice of pound cake and top with all those s'more ingredients to take that slice of pound cake to a new level.  Yum! 


Brownie S'more Cupcake
Nothing to say about this baby.  A totally decadent s'more that starts with a boxed brownie mix.

I have never met a s'more I didn't like.  Have you? 
Chocolate and melted marshmallow is always a good combo!

Cheese and Charcuterie Platter

I think I could make this a meal every Friday evening!
Cheese and Charcuterie platters are great for an evening in with the hubby or with girlfriends.



Much more impressive than your typical cheese and meat platter!

 I have paid plenty to have a Cheese and Charticurie platter in some Chicago restaurants.  So I decided to try it at home.  Not only is it easy to do, but it is so fun planning it all out.  Basically you can sniff and taste your way to make your choices.



Let's start with some basic tips so that you too can create your own Cheese and Charticurie platter.

1.  Crackers and slices of bread from a baguette

2.  Fresh seasonal fruit (grapes are always good year round)

3.  Nuts (almonds are my favorite or pine nuts)

4.  Cured meats (salami and prosciutto work well)

5.  Cheeses (you will want a blue cheese variety, a soft cheese and a hard cheese)

6.  Honey and jam

Ask the butcher to help with your selections and absolutely ask to taste the cheese and meat.  If you like it, you will enjoy it on your platter.



There really is no hard fast rule.  Be as creative as you want and enjoy all the textures and flavors.
Build a fire in your fireplace...yes, those days are coming,
grab your honey or your favorite girlfriends and a bottle of your favorite wine.
You will so enjoy the experience...IN YOUR OWN HOUSE!

Grilled Cheese 2 Ways

Once the weather turns cooler, having a warm grilled cheese sandwich and a hot bowl of soup is just perfect for lunch or dinner.  Check out my two favorite ways to have grilled cheese...much more than two slices of bread and a slice of cheese I might add.


Picture a warm sandwich just oozing with melted cheese!
Toasted just right pieces of bread and lots of other ingredients to take that grilled cheese to the next level!  Are you ready?  Here's my first favorite...

Apple Cheddar Bacon Grilled Cheese Panini



This combo is absolutely amazing!
Roasted red onion mayo and melted cheddar smother crispy strips of bacon and juicy apple slices all between 2 slices of Italian bread.  Drool worthy for sure.

Ok, coming in as a really close second favorite grilled cheese would be BLT Grilled Cheese!


2 kinds of cheese with slices of tomato, lettuce and crispy strips of bacon.  This is a perfect sandwich for a cup of tomato soup.

Apple Cinnamon Roll Cake

Happy fall y'all!
The calendar may say fall, but it still feels like summer.  May I suggest to all Midwesterners...hold on to that feeling!  We all know that at some point the temperature will plummet. But until then, let's enjoy all the sunny warmth!  Apple recipes are still hot even though pumpkins are making an appearance.  So grab a pumpkin latte and a slice of Apple Cinnamon Roll Cake to have the best of both seasonal foods!


Made in a bundt pan this is a 5 ingredient easy recipe!


Each slice contains bits of apple with sweet cinnamon roll.  Yummo!

Ingredients:
2 packages of cinnamon roll tubes
nonstick spray
1 Granny Smith apple, chunked
1/2 cup unsalted butter (1 stick), melted
1 tsp cinnamon
Directions:
Preheat oven to 350 degrees.  Spray a bundt pan with nonstick spray.  Cut cinnamon rolls into quarters.  Place 1 package of quartered cinnamon rolls into prepared bundt pan.  Add a layer of chunked apples.  Top with second package of quartered cinnamon rolls.  Drizzle with melted butter and sprinkle with cinnamon.  Reserve the icing included with each cinnamon roll packet.  Bake at 350 degrees for 25-30 or until top is golden brown.  Remove from oven.  Flip over to remove pan.  Drizzle with icing.



I think I need more than one slice, but no worries...I'll share with you.

Chicken BLT Puffs

I am always trying out recipes for weekday meals that are easy and taste good.  Something that takes me away from the standard spaghetti or tacos.  Today, I have a spin on a classic sandwich.  You know the B.L.T.  Well, it just got fancy without much extra work.



Chicken B.L.T. Puffs are little packets of dinner!
Each puff is made with chicken, sun-dried tomato and bacon all in a creamy mixture.  Then each is wrapped up in a crescent roll and baked to crispy perfection!



Top each with a dollop of sour cream and some shredded lettuce.  



This sure ain't your mamma's BLT!
Nope, these are fancy!


Ingredients:
2 cups shredded, cooked chicken breasts
8 ounces cream cheese, plain
6.5 ounces sun dried tomatoes, drained and chopped
2.8 ounces bacon pieces, cooked (bacon bits will work just fine)
1 stick unsalted butter, melted
1 cup Italian bread crumbs
1 cup Panko bread crumbs
2 packages crescent rolls
sour cream
shredded lettuce
Directions:
Preheat oven to 375 degrees.  In a large bowl, mix together shredded/cooked chicken breasts, plain cream cheese, drained/chopped sun dried tomatoes and bacon pieces.  Mix well and set aside.  Place melted butter in a shallow dish.  Place both kinds of bread crumbs in another shallow dish.  Mix the bread crumbs.  Take a crescent roll triangle and lay out flat.  Place several Tablespoons of the chicken mixture into the center of each crescent roll.  Fold crescent roll over chicken mixture and shape into a square.  Dip each packet into melted butter and then coat with bread crumbs.  Place on an ungreased baking sheet.  Bake for 20-25 minutes in a 375 degree oven until golden brown.  Serve with sour cream and shredded lettuce.

Each puffs up and has a crunchy exterior followed by a creamy inside.
Boil and cook your own chicken to shred or buy a prepared chicken package.
You will love the ease of this delicious dinner!
