Looks like we are going to have to do some shoveling during our super bowl viewing.
Lots of snow coming our way!
But, that won't slow us down on snacking!  And we will be winter grilling during the storm!

Wings and Fries Super Bowl Round Up

Have you heard any rumors about the commercials during the Super Bowl yet?
I heard that there is one about a man that enters into a life sized Pac Man game.  Not sure what the product for that is.  Dove will have a commercial that focuses on the stages of fatherhood and Skittles will have an ad for the first time.  The clydesdale horses never disappoint and those Doritoes commericals are usually pretty funny.  I think I get just as excited about the commercials and half time show as I do for the actual game.  BUT, none of Super Bowl Sunday is complete without the perfect game time food.
So today let's check out some wings and fries!!!  Perfect game time food, right?

Southwestern BLT Stacks

As I mentioned before, we are working on a kitchen remodel.  It'll be going on for a long time!  Not because it is a huge project, but because I have an architect hubby who is extremely accurate yet painfully slow.  Love him to death and have finally come to accept that projects in our house take an extraordinary amount of time!  Anyhow, he needed to remove the trim from one of the cabinets before moving in the new refrigerator.  So, I suggested removing the items from said cabinet...silly, right?  Bam!  Shelf within the cabinet falls with mugs and a bowl full of sugar scattering EVERYWHERE!  I bit my tongue and didn't say "I told ya so."  Although, I did think it in my head.  :)
Next lesson learned during kitchen remodeling???
Stacked items will tumble out of cabinets when extreme banging is taking place on said cabinet.
I am glad I can share all these tidbits along the way.  Oh, and sugar all over the floor is extremely slippery!  Who knew?  On to a spin on a traditional fave!


Southwestern BLT Stacks
are so fun!
Perfect for a quick weeknight meal with a bowl of soup!


Kind of like your own Scooby sandwiches!
So, I bet you are wondering what makes these BLT Stacks southwestern?
It's the sauce...a mayo with a tiny kick.
You won't be holding the mayo on these babies!


Ingredients:
1 loaf french bread
2 Roma tomatoes
12 strips cooked bacon
butterhead lettuce
2 Tbsp Ranch dressing
1 Tbsp mayo with olive oil
1/2 tsp chili seasoning
Directions:
Mix mayo, Ranch dressing and chili seasoning in a small bowl.  Warm loaf of bread in a 350 degree oven for 5-6 minutes.  Slice into 1/2" slices.  Assemble in the following order:  1 slice of bread, a little bit of southwestern mayo, bacon, lettuce and tomato.  Top with another slice of bread and repeat.  Place 1 slice of bread on the top.  Use a toothpick skewer to hold stack in place.

Your kiddos will love making these sandwiches and you will love the spin on the 'ol traditional sandwich.

Baked Fontina Dip

Picture yourself sitting in front of a roaring fire and sipping on a glass of wine while snowflakes gently fall.
Pretty nice, huh?  I am thinking some of you experienced waaaaay more than gently falling snowflakes in the past couple of days.  So sorry...we got 18+ inches one winter in the recent past.  I feel your pain.   But, even though a mountain of snow awaits you, once the storm has passed, it is kind of fun hunkering down.
Well,
Baked Fontina Dip
would be perfect for the Super Bowl or
just hanging out by the fire with a glass of wine.  It is rich and creamy!


Based on one of my favorite chefs, The Barefoot Contessa, Baked Fontina Dip is a warm dip just begging for a cracker!



It's made with Fontina cheese and spices that you melt in the oven in a small cast iron skillet or other small baking dish.

Ingredients:
5 oz Fontina cheese, chopped into large pieces
1 1/2 Tbsp olive oil
1 Tbsp minced garlic
1 tsp rosemary leaves
1 tsp thyme leaves
1 tsp fresh parsley for garnish
Directions:
Preheat oven to 375 degreees.  In a small cast iron skillet or small oven proof baking dish, place pieces of Fontina cheese.  Sprinkle minced garlic, rosemary leaves and thyme leaves over top. Bake at 375 degrees for 14-15 minutes.



 Curl up by the fire or take a break from shoveling snow (it'll be there tomorrow), heat some cheese and relax.  OR, get ready to cheer on your Super Bowl Pick with Baked Fontina Dip!  Either way, you are sure to enjoy it!

Toasted Sesame Teriyaki Wings

Time for Tuesday's Weekly Wing Challenge #4!
This is the last week before The Super Bowl, so here's one more wing recipe sure to get you inspired!


Each week I find my new favorite!
Toasted Sesame Teriyaki Wings
are da bomb!


Crispy and full of flavor!


Another wing recipe that is finger licking good!

Ingredients:
20 wings
1/3 cup crushed pineapple
1/3 cup less sodium soy sauce
1 tsp fresh, grated ginger
1 tsp minced garlic
1 tsp salt
3 Tbsp sesame seeds
Directions:
In a small saucepan, heat crushed pineapple and soy sauce.  Heat 3-4 minutes to boil down and thicken.  Add the fresh ginger, minced garlic and salt.  Preheat oven to 400 degrees.  In a large baking dish, lay out the wings.  Baste with the sauce.  Bake at 400 degrees for 40 minutes.  Baste with remaining sauce and cook an additional 5 minutes.  During that last 5 minutes, place sesame seeds in a shallow pan and toast for 2-3 minutes.  Remove wings and sprinkle with toasted sesame seeds.


The toasted sesame seeds and the sauce really give the wings that Asian flavor!

Pizza Crackers

Registration opened for the 15th Annual Chicago Polar Plunge.
I just ran on over and signed up as quick as I could....NOT!
I can't even imagine.  Brrrrrr....
I can't even wear a short sleeved shirt inside the house during the winter months, let alone run into frigid water in my bikini!  Besides, SUPER WHITE PASTY SKIN! Those people are either brave or crazy or have had a few drinks.  Maybe all of the above?  But, it is all for a good cause.  
I'll just watch the clips from the event in my warm home, under my snuggie.
Anyhow, remember when I told you yesterday about my Super Simple Super Bowl Snack?  Check out Philly Cheesesteak Pizza Bites if you missed it. Easy! 
Yesterday, I also alluded to an even simpler snack idea coming your way.  Well, here it is....

Pizza Crackers

I am almost embarrassed to share these...but they are soooo good, so I'm gonna share!

You can whip these up in seconds and I kid you not.
But there is something about the combo on these particular crackers. They are addicting!


So, if you are looking for a last minute Super Bowl Snack, this is it!
All you need is a box of water table crackers, pepperoni. shredded mozzarella, basil and your microwave.


Start with the cracker, add a pepperoni, top with mozzerella cheese and a sprinkle of basil.  Place each Pizza Cracker on a microwave safe plate (cooking 5-6 at a time) and cook on high for 20 seconds.
Voila!
Pizza Crackers!
Even the simplest of combinations can turn into something delish!
A crispy bottom for the "pizza crust" and the cheese just melts over top...instant pizza!

Philly Cheesesteak Pizza Bites

Say this with me...Simple Super Bowl Snack.

Philly Cheesesteak Pizza Bites
are so simple to throw together, but don't they look good?


So, we have started our kitchen remodel.  When we bought our house in 2003, that was the first project we were going to do.  12 years later, we are finally getting to it.  Seems like there was always something else that took precedent.  Anyhow, the architect hubby says it will be simple. Hmmmm, let's start with day one of construction...a simple activity of picking up the wood flooring.  Had to rent a truck, there was a snowstorm and it was 0 degrees outside.  Only need to get 48 50lb boxes into the basement.  Simple, I was told.  I'll let you imagine how that went.  However, when I say Philly Cheesesteak Pizza Bites are simple, I am for real!  Simple, simple, simple!


Ingredients:
12 slices thin white bread
1 green pepper, sliced thinly
1 small onion chopped
1 Tbsp olive oil
1 tsp balsamic vinegar
1/4 lb deli roast beef, rare
6 slices provolone cheese
Directions:
Punch out circles of white bread.  Toast in the oven at 375 degrees for 5-6 minutes.  Heat 1 Tbsp olive oil over medium high heat.  Add the thinly sliced green pepper and chopped onion.  Add balsamic vinegar.  Saute 5-7 minutes or until soft.  Spoon green pepper/onion mixture onto toasted rounds.  Add pieces of rare deli roast beef.  Top with a piece of provolone cheese.  Return to the oven for 2-3 minutes or just until cheese melts.


The provolone cheese just melts over the roast beef and green pepper/onion mixture.  Philly Cheesesteak in 2-3 bites!  YEP, a Simple Super Bowl Snack!!!  And come back tomorrow...I have another snack idea that is even simpler!  The Big Game is a week from today and I bet you are starting to think about what to serve.  Might want to add this one to your plans!  Philly Cheesesteak Pizza Bites would even be great with a bowl of soup for a quick weeknight meal!
