Virtual Cookie Swap - Swedish Coconut Cookies

This year I decided to be a part of a virtual cookie swap.
Do you wonder how that works?
Well, you exchange cookie recipes with another blogger and bake the cookies from the recipe you receive.  You make a new friend, learn a new recipe and eat the fruits of your labor which involve cookies.  Pretty cool, huh!  I am totally in!

So, who was I paired with to swap cookie recipes?
My newest friend Nettie Moore!  I can call her friend because we share the same passion for cooking.  Any baker/cook is a friend of mine...instantly!  Moore or Less Cooking is where she shares some delicious recipes.  She shared her recipe for Swedish Coconut Cookies with me.  
And they are so yummy!


I think these cookies would be good anytime of year!
They are crispy and have an addicting coconut flavor.  Perfect for any cookie exchange too!
The easy, simple ingredient recipe makes 72 cookies so you can keep a dozen for yourself and wrap up the rest for gifts.  Ok, keep 2 dozen for yourself because you are going to so enjoy these cookies.

Ingredients to make 72:
3 1/2 cups flour
2 cups sugar
2 cups butter, softened
1 Tbsp baking powder
1 tsp baking soda
1 tsp vanilla
1 cup sweetened, flaked coconut
Directions:
Combine all ingredients except coconut in a large bowl.  Beat at low speed with a hand mixer, scraping the bowl often, until well mixed.  Stir in coconut.  Divide dough in half: shape each half into a 12 x 12 inch log.  Wrap each log in plastic wrap.  Refrigerate for at least 2 hours until firm.  Heat oven to 350 degrees.  Cut logs into 1/4 inch slices.  Place each slice onto a parchment lined cookie sheet, at least 2 inches apart since cookies will spread.  Bake for 10-14 minutes or until edges are lightly browned.  Cool for 1 minute on cookie sheet before removing to cooling rack.
