Chicken BLT Puffs

I am always trying out recipes for weekday meals that are easy and taste good.  Something that takes me away from the standard spaghetti or tacos.  Today, I have a spin on a classic sandwich.  You know the B.L.T.  Well, it just got fancy without much extra work.



Chicken B.L.T. Puffs are little packets of dinner!
Each puff is made with chicken, sun-dried tomato and bacon all in a creamy mixture.  Then each is wrapped up in a crescent roll and baked to crispy perfection!



Top each with a dollop of sour cream and some shredded lettuce.  



This sure ain't your mamma's BLT!
Nope, these are fancy!


Ingredients:
2 cups shredded, cooked chicken breasts
8 ounces cream cheese, plain
6.5 ounces sun dried tomatoes, drained and chopped
2.8 ounces bacon pieces, cooked (bacon bits will work just fine)
1 stick unsalted butter, melted
1 cup Italian bread crumbs
1 cup Panko bread crumbs
2 packages crescent rolls
sour cream
shredded lettuce
Directions:
Preheat oven to 375 degrees.  In a large bowl, mix together shredded/cooked chicken breasts, plain cream cheese, drained/chopped sun dried tomatoes and bacon pieces.  Mix well and set aside.  Place melted butter in a shallow dish.  Place both kinds of bread crumbs in another shallow dish.  Mix the bread crumbs.  Take a crescent roll triangle and lay out flat.  Place several Tablespoons of the chicken mixture into the center of each crescent roll.  Fold crescent roll over chicken mixture and shape into a square.  Dip each packet into melted butter and then coat with bread crumbs.  Place on an ungreased baking sheet.  Bake for 20-25 minutes in a 375 degree oven until golden brown.  Serve with sour cream and shredded lettuce.

Each puffs up and has a crunchy exterior followed by a creamy inside.
Boil and cook your own chicken to shred or buy a prepared chicken package.
You will love the ease of this delicious dinner!
